
Chinese Sausage Fried Rice
I needed something quick and easy to make for dinner, but didn't have much available at home. Here's what I had available:
Cooked Rice
Chinese Sausage
Garlic
Eggs
Green Onions ( always have these handy =P )
Sesame Oil
Sesame Seeds
Seasoning Mix I made a while back (crushed red peppers, sesame seeds, seaweed)
A great tip is that older rice works better than fresh rice. Fresh rice is just too sticky and moist to fry well. If you must use fresher rice then take the time to place the rice in the refrigerator uncapped and allow the rice to cook and dry out a bit. Another great tip to keep in mind, and something I've learned from personal experience, is that you need a VERY hot wok or frying pan so that the rice won't stick to the wok. If you have a nice non stick wok then you probably don't have to worry too much about this. My wok at home's worn out a bit and the nonstick coating is almost gone. When I fry a big batch of rice there's always sticking, so I used a smaller amount this time and it worked beautifully.
Heat the wok up and add some cooking oil. You can also add some sesame oil for a fresher nuttier flavor. Slice the garlic into thin segments and brown in wok, being careful not to let them burn. Toss in the sliced Chinese Sausage and heat thoroughly. The sausage is actually precooked, so you're really just heating it up and letting it fry a bit.
Add the rice and quickly start mixing it up to quickly cook. After a minute or so add a couple of eggs and once again quickly mix. This is the reason why a HOT wok is crucial. If there's too much rice or not enough heat then the rice becomes soggy. If you have a good temperature going on the egg will cook while you mix and you'll be left with egg evenly scrambled with all your rice. It's probably a good time to add some salt or pepper to taste.
Lower the heat to medium I'd say, and add in any extras you like. I added sliced green onions, sesame seeds, my seasoning mix, a bit more sesame oil, and I think some chili oil I forgot haha.

Delicious to eat by itself, scrumptious to eat with other dishes.
